Ricotta is a mild, fresh cheese with a soft texture and a slightly sweet flavour. Most ricotta is made from cow’s milk whey that is drained off while making cheeses such as mozzarella and provolone. Vegetarian (Lacto). Ricotta is a versatile cheese that can be used in pies, cheesecakes, baked or even spread on a slice of bread with some honey, nuts and cinnamon. Ricotta consists of mainly protein and fat, a high percentage of calcium and very little carbohydrate.
