Prawn & Haloumi Skewers

Our Prawn and Haloumi Skewers, a delightful combination of succulent prawns and the savory richness of Mezé Haloumi cheese, all seasoned to perfection and grilled to a delectable perfection, capturing the essence of the Mediterranean.

    Ingredients

    • 500g Queen Prawns,
    • cleaned and deveined
    • 250g Mezé Haloumi cheese fingers
    • 1 cup Flour
    • 500ml Cooking Oil
    • 24 Skewers

    For the Sauce:

    • 200g butter
    • juice of 2 Lemons
    • 30g fresh Parsley
    • 100ml Sunflower Oil
    • 1/2 tsp Mustard
    • 2-3 cloves Garlic
    • Salt and Pepper

    Preparing the spices

    Cut Haloumi into 2cm cubes.

    Thread the prawns and Haloumi cubes alternatively onto the skewers and lightly flour the haloumi and the prawns.

    Heat the cooking oil. Use a small size pot so that part of the skewers will stick out of the pot and you can easily remove them from the oil.

    Cook for about 3 mins, remove and place on a kitchen towel to collect the excess oil.

    To Prepare the Sauce

    Heat a small saucepan on low heat. Melt the butter, add the oil and garlic.

    Remove from the heat and add lemon juice, 50ml of water, parsley, mustard and salt and pepper.

    Place in a food processor and blitz for a minute so that the butter and other ingredients mix together.

    Place skewers on a large serving dish with some extra lemon wedges and serve hot.
