Tabbouleh Salad with Haloumi

Explore zesty Mediterranean flavours with our Tabbouleh Salad featuring golden and grilled Mezé Haloumi. This salad combines the freshness of chopped parsley, mint, tomatoes, and bulgur, all tossed in a zesty lemon and olive oil dressing, with the creamy richness of grilled haloumi cheese for a refreshing and satisfying dish that celebrates the flavours of the Mediterranean.

    Ingredients

    • 100g Parsley
    • 30g fresh Mint
    • 2 medium-sized Tomatoes
    • Half a Cucumber
    • 4 Spring Onions
    • Juice of 1 Lemon
    • Olive Oil
    • Salt and Pepper
    • 1/2 cup Bulgur Wheat
    • 250g Mezé Haloumi fingers

    Directions

    Wash all the herbs and vegetables. Chop the parsley and mint, and place in a bowl. Roughly chop the onions, tomatoes and cucumber and add to the herbs.

    Boil the kettle. Place the bulgur wheat in a bowl and cover with boiling water, set aside for a few minutes until it has softened.

    Strain and once cooled, add to the bowl with herbs and veggies.

    Season with salt and pepper and then dress with lemon juice and olive oil and gently toss, set aside and allow flavours to combine.

    Add cooked Haloumi to the salad, add an extra squeeze of lemon and serve.
