Haloumi and Courgette Skewers

Transport your taste buds to the Mediterranean with our Haloumi and Courgette Skewers, a harmonious combination of savoury Mezé Haloumi cheese and tender courgette (zucchini), seasoned to perfection and grilled to perfection, capturing the essence of sunny Mediterranean flavours.

    Ingredients

    • 200g Mezé Haloumi Cheese
    • 2 Courgettes
    • 1 pinch red Chilli Flakes
    • 2 tbsp Olive Oil
    • Sea Salt and Cracked Black Pepper
    • 3 sprigs Mint
    • 2 sprigs Rosemary
    • Juice and zest of 1 Lemon
    • 8 wooden Skewers

    Preparing the spices

    Soak 8 wooden skewers in a tray of cold water.

    Cut the Haloumi into 2cm cubes and set aside in a bowl.

    Use a potato peeler to peel the courgettes into long ribbons

    Finely chop the mint leaves, discard the stalks.

    Add the chilli flakes, mint and lemon zest to the Haloumi cubes.

    Add the olive oil and season with salt and pepper. Mix well to coat.

    Skewer up the Haloumi alternating with the folded ribbons of courgette.

    Cook on a griddle pan for 3 or 4 minutes on each side, until golden and cooked through.

    Brush any leftover marinade over the kebabs as they cook. Scatter with picked rosemary and a squeeze of fresh lemon
