Ingredients
Preparing the spices
Soak 8 wooden skewers in a tray of cold water.
Cut the Haloumi into 2cm cubes and set aside in a bowl.
Use a potato peeler to peel the courgettes into long ribbons
Finely chop the mint leaves, discard the stalks.
Add the chilli flakes, mint and lemon zest to the Haloumi cubes.
Add the olive oil and season with salt and pepper. Mix well to coat.
Skewer up the Haloumi alternating with the folded ribbons of courgette.
Cook on a griddle pan for 3 or 4 minutes on each side, until golden and cooked through.
Brush any leftover marinade over the kebabs as they cook. Scatter with picked rosemary and a squeeze of fresh lemon
